Lovely Lemon Blueberry cake

I like shortcuts. If I can make it quicker, I’m all for it.
I wanted to make a lemon blueberry cake today, my husband did something super sweet for me so I wanted to make something sweet for him.

No lemon cake mix. Bummer.

I used all but 1 of my lemons last night making lemon butter shrimp.

No lemon pudding mix (do they make lemon pudding mix? That would be a yes.

Yes, they do make lemon instant pudding mix. I just don’t have any on hand.) Bummer.

Oh! I’ve got lemon jello. Cool. We’ll make it work.

Here’s what I used.

I also used the juice from my one remaining lemon.

1. Cake mix. Any yellow cake mix would do. Follow the directions.
2. lemon jello mix, (if you have lemon pudding mix, use that) add to the cake batter.
3. Frozen blueberries 1/2 a package. Add to the cake batter.
4. The juice from 1 lemon and 1 TBSP lemon zest. Add to cake batter.

Bake at temp stated on cake mix. Mine was 350 deg. For about 45 min.

Ice with a thin frosting. I microwaved cream cheese frosting and drizzled it over the cake.

It’s light, creamy tasting and very, very soft. All the Blueberries migrated to the bottom of the pan/top of the cake, but they are soft and very tasty.
