I have to admit, I love canning. I made 4 quarts of dill pickles last year, the only problem was they ended up soft, not crunchy. However it wasn’t a total fail as everyone loved them. What cracks me up is how *amazed* people are that you can do this yourself!
I had the same soft issue last year. There is a process of salting your pickles to keep them crisp, but I hate using that much salt. I am trying a Ball product called pickle crisp this year. I just opened one of the dill jars and they seem fairly crisp.
Mmm, I can’t wait until I have enough produce to start canning again! And by “I” I mean my parents, ’cause canning is totally a my-mom-and-I effort, plus they have a garden that’s about six times the size of mine 🙂
