Pork piccata
This is a Weight Watchers Recipe. We’re working on trying out some healthy new recipes.
We enjoyed the pork dish, although it was a little too lemony for some of the family. The next time I make this dish I will use less lemon.
Here is the ingredient list….
3 Tbsp all-purpose flour, I used whole wheat flour instead of all-purpose flour
1 tsp table salt, divided
1/2 tsp black pepper, freshly ground, divided (or less to taste)
1 pound(s) uncooked lean pork tenderloin, trimmed, cut into 16 thin slices – I used one pound of pork cutlets. Trimmed.
2 1/2 tsp olive oil, divided
3/4 cup(s) canned chicken broth, reduced-sodium – I used homemade stock
1/4 cup(s) fresh lemon juice
2 tsp cornstarch
2 tsp salted butter
1 Tbsp capers, drained
1/2 tsp minced garlic
12 oz fresh spinach, baby-variety

I made chicken piccata recently and loved it. I might have to try the pork version!

I’ve never used pork either but I’m going to try it. I hate it when I put too much lemon in – once it’s done you’ve gotta eat it, I’m afraid. 🙂
