Meatless Monday

I hope you had a fantastic weekend. We had a nice weekend here. Did a little yard work, used the grill, splashed around in the pool on Saturday, had a lovely lunch with some equally lovely friends and lounged around the house on Sunday. No Farmer’s Market trip over the weekend, but I’m planning on going today. I’m low on veggies.

The heat outside is forcing me to get creative this week, I can not fathom turning on the oven or the stove if I can help it. I’m a native Texan, so shouldn’t I be accustomed to the heat? Perhaps, but I’m not. I dream of cooler weather, snow even. Furry boots whisper my name. So, to keep my kitchen as cool as possible; I have turned off the lights, set my dishwasher to non-heated drying, and I’m using my slow cooker for dinner.

I’m making spaghetti via the slow cooker. Wha? Yes, you read that right…spaghetti. It’ not a totally foreign idea to me, you should not be too surprised. I did make slow cooker lasagna , however the idea to make spaghetti in the slow cooker came from my friend April. I defrosted some of my homemade spaghetti sauce and made spaghetti in my slow cooker.

Here is how I made the spaghetti.

TO BEGIN

  • one happy, little slow cooker (okay maybe not so little)
  • 4 cups of homemade sauce, but store-bought sauce would work just as well
  • 1 package (14.5 ounces) of pasta

Pour the sauce into the slow cooker. Break the noodles in half and force them down into the sauce. Like this…..

Place the lid on the slow cooker and cook on high for 1 hour and 40 min. Remove the lid, stir the pasta

ADD

  • 1 can diced tomatoes (un-drained)
  • 1 -5.5 ounce can of V8 or 1 -8 ounce can of tomato sauce

STIR WELL

  • replace the lid and cook for 10-15 minutes more

Garnish

I sprinkled mine with cheese and parsley.

  1. I am a southern girl currently living in the north and when you mentioned snow, it sent chills down my spine. I don’t like it to hot, but I know winter will show it’s ugly head soon enough. In the meantime, I’ll try to send you some milder temps. πŸ˜‰
    I wish I used my crockpot more, I know it sounds silly but I don’t know how to use it. The recipe is helpful, I never considered making spaghetti with it. Maybe, I’ll give it a try. I am all for easy.

    • I guess that’s true. Up North you get too much snow. We don’t get much snow here in North Central Texas. The last few years we’ve gotten some, but prior to that it was few and far between on the snow front.

      I post a lot of slow cooker recipes. I love my slow cookers, they’re great for many types of cooking. If you give the spaghetti a try please let me know if you enjoyed it.

  2. Sounds like a perfect family weekend! I really think I need to look into getting a slow cooker as I love what you can do with it, and like you, donΒ΄t really want to use my oven much at the moment πŸ™‚

  3. What a great idea! I never would’ve thought of making spaghetti via slow cooker…it’s been awfully hot here too, & I haven’t dared turn my oven on in days, either.

  5. I love the crock for ANYTHING, too! This heat is just unbearable. When I don’t even want to BE outside — it’s hot! I just want to hibernate UNTIL winter. I love sweatshirts, sweaters, fuzzy flannel jammies…. not breaking out into a sweat 3.2 seconds after walking out the door. Bleh!

    • I know, I’ll miss the warmth when it’s cold. It was 107 deg F here on Monday. Texas was the hottest state in the USA on Monday. Hotter than Death Valley. It’s crazy hot.
