Meatless Monday:Pasta Bake
Happy Monday my lovely readers. It’s meatless Monday! I make this pasta bake year round, it is easy, tasty and can be made meatlessly (is that a word? No? Yes?)
I make this recipe for friends who need easy meals after surgery or new babies. You can put this together, freeze it and bake it later.
Here is what you’ll need.
1 jar of spaghetti sauce or homemade sauce
1 bag of frozen meat (for those choosing not to be meatless) or cheese ravioli (This time I used a spinach and cheese ravioli, so I skipped the crumbled spinach step)
1/2 bag (or less) of frozen leaf spinach crumbled
1 can of diced tomatoes
1/2 cup of water
1 bag Italian cheese blend
1/4 cup Parmesan cheese
What to do…
Spray bottom of baking dish with cooking spray. Put 1/4th of spaghetti sauce in bottom of pan. Tilt pan back and forth to cover the bottom with sauce. Put 1/2 bag of ravioli in pan. Sprinkle 1/2 of crumbled spinach over pasta. Add 1/2 can of tomatoes and top with cheese and cover with 1/4 of spaghetti sauce (repeat process with 2nd layer.) Add 1/2 cup of water to remaining spaghetti sauce and pour over top of the dish. Set aside a bit of the Italian cheese blend to mix with the Parmesan cheese and put the rest of the cheese over the sauce. Cover and bake at 350 for 45 min. Increase oven heat to 425 Remove foil and sprinkle with Parmesan and Italian blend cheese. Bake for 15 min more. Enjoy.
