We’re not Meatless this Monday….

Today is my husband’s birthday. Happy Birthday sweetie!

In our home, the birthday person picks the evening meal and the cake type.

My husband chose tacos for dinner.

So, we’re not meatless this Monday .

I am, however, making  “frijoles de la olla” which are meatless, so I will share a link to that recipe with you.

I found this recipe on Muy Bueno Cookbook.

It’s a very simple recipe, which surprised me.

I’m always tossing extra seasoning and broth it mine. You know what?

I’ve been over doing it.

I’ve been masking the true beauty of the pinto beans flavor.

I’ve been doing it wrong. I know that now.

The only change I made to the recipe is that I used my slow-cooker.  Cooked on high for 6 hours and low for 2 hours. They are tender, flavorful and delicious.

The beans are wonderful all alone. I put mine in a tortilla and had a meatless taco. Yumm!

    Glad you liked our frijoles…they truly are soooo simple to make and can be prepared several ways once you have a great fresh pot of these beauties.
