Frozen + Fresh= Maybe not Fabulous, but good enough

Well, it’s official (or doctor verified) that I am indeed sick.  😦 Sinus infection bordering on bronchitis. Fun, fun, fun.  I need to rest as much as possible over the next few days, we’ve got a busy weekend.  Resting, not so easy for me, the biggest thing  “resting”  means for my cooking is that I will be relying on the few pre-made frozen items I have.

On a funny frozen food side note, have you seen any of the Vlog postings from Freezer Burns?  Hi-lar-ious!!  I really enjoy watching the videos.

When it comes to pre-made frozen items, I usually only buy certain types of items, and certain brands, so I don’t care which one we eat tonight. I let the kids decide.

So, we’re having freezer Mexican.  We’re having taquitos.  I’ll make fresh guacamole and re-fried black beans to go with it.

Here’s my Mom’s Guacamole dip recipe.

  1. 5 avocados, sliced
  2. 1 medium tomato, diced
  3. 1 TBSP lemon juice
  4. 1 TBSP picante sauce
  5. 1 tsp garlic salt (I prefer to use diced garlic and a dash of salt)
  6. pepper to taste
  7. 1/2 cup of diced onions

Open and de-seed avocados. Mash with a fork.  Add remaining ingredients.

*if you are making this ahead, put the avocado seed into the guacamole and refrigerate it.  The seed slows down the browning process.*

I’ll probably do a freezer meal tomorrow also, I’m thinking fish tacos, which means I need to find a good recipe for my slaw.  I am always looking for new slaw recipes.  I have one with ramen noodles in it.  It’s pretty good.

How do you handle sick days?  Do you order out?  Do you rely on frozen meals?

  1. Yum, guacamole! My favorite place to enjoy it is beachside in Cozumel, watching the sunset. Hope you feel better soon.

    • Thank you. I’m sure the medication I’m on will be helpful, right now I’m sure super jittery. Steroids. Meh.
      We love guacamole, you have to keep an eye on my 11 year old or she’ll hog the whole bowl!
