Meatless Monday, Not your ordinary beans and rice

We’re a carnivore family. Honestly. Sometimes it’s nice to go meatless though. To read more about Meatless Monday click here. Tonight we are having Crock Pot pinto beans and rice.
Let me be really honest here, I almost made a huge mistake and put chicken broth in the beans. It’s what I usually do. I caught myself
(WHEW!)
I used veggie bullion instead.
Here’s the ingredient lineup.
3 cups of dried pinto beans, washed and sorted. No yuckies in my beans!
1 can of diced tomatoes. I really like the fire roasted ones.
1 cup diced onion
1/2 cup of diced celery
1/2 cup of diced green pepper
(or you can use the frozen, pre-diced ones. I get them from Kroger)
1 TBSP of chili pepper
2 TBSP of cumin (love me some cumin)
1 1/2 TBSP of garlic
2 veggie bullion cubes
6-7 cups of water
Cook in the crock pot for 5-6 hours on high.

That looks good. May I humbly suggest if you have time next time, you take that onion peel and celery leaves and other leftovers and make veggie broth? It’d be cheaper.:)
