Meatless Monday, Not your ordinary beans and ricehere. Tonight we are having Crock Pot pinto beans and rice. Let me be really honest here, I almost made a huge mistake and put chicken broth in the beans. It’s what I usually do. I caught myself
(WHEW!)I used veggie bullion instead.
Here’s the ingredient lineup.3 cups of dried pinto beans, washed and sorted. No yuckies in my beans! 1 can of diced tomatoes. I really like the fire roasted ones. 1 cup diced onion 1/2 cup of diced celery 1/2 cup of diced green pepper (or you can use the frozen, pre-diced ones. I get them from Kroger) 1 TBSP of chili pepper 2 TBSP of cumin (love me some cumin) 1 1/2 TBSP of garlic 2 veggie bullion cubes 6-7 cups of water Cook in the crock pot for 5-6 hours on high.
