Irish Stew

Stew and whole wheat soda bread....a perfect pair.

Stew is one of those meals that feels like a hug in a bowl.

My family is Irish, Scottish, German. Our varied heritage means we embrace a little bit from each piece of our backgrounds. Well, mostly we embrace the Irish and the German. I should work on the Scottish.

Irish stew is one of my favorite dishes.

Most Irish stews are made with lamb. The reason, lamb is less expensive in Ireland.

Purist Irish stew is lamb (mutton), potatoes, onions, and water…

This is not a purist stew.

  1. I am not using lamb, because of the higher price of lamb vs. beef and because the idea of eating a lamb always causes a mutiny in my household.
  2. I add carrots, turnip, garlic and barley.

This stew recipe should work with either lamb or beef.

  • 2 1/2 pounds of stew meat (I used beef)
  • 1 medium yellow or white onion, diced
  • 2 cups of carrots, diced or sliced
  • 1 small turnip, peeled and diced
  • 1/4 cup of all-purpose flour
  • 1 clove of garlic, diced
  • 4 cups of beef stock
  • 1- 12 ounce Irish stout beer *optional* if you’re not adding beer, increase your stock my 1 & 1/2 cups
  • 1/2 cup of pearl barley
  • 1 teaspoon of thyme
  • 1-2 bay leaves
  • 1/4 teaspoon of sea salt
  • 1/4 teaspoon of freshly cracked pepper
  • 1 teaspoon of parsley
  • potatoes *4 large potatoes peeled and diced, or 1 bag (about 4 cups) of small potatoes left whole*
  • 1 Tablespoon of olive oil

Heat the oil in a cast iron dutch oven or large stock pot. Add the flour to the meat, coat the meat as evenly as possible. Brown the meat. Once the meat is browned (8-10 minutes), add the beer to the pot. Add the onions, carrots, turnip and garlic. Add the seasoning and spices. Add the beef stock. Add the pearl barley. Stir to combine.

Place the lid on the pot and cook on a medium heat for 1 hour, stirring occasionally. After 1 hour, add the potatoes. Stir to fully combine the stew with the potatoes. Return the lid to the pot and continue cooking for 1 more hour. (Total cook time, 2 hours).

The lid can be removed for the last 30 minutes to thicken the stew if you wish.

My son and I had dinner at Red Robin on Saturday evening.  It was our special dinner out while my husband and daughter attended a Father-Daughter Valentine’s dance.

Cra-mazing dipped pretzels

I bought these super duper long pretzels. As soon as I saw them, I knew that I

  1. had to buy them
  2. intended to dip them in melting chocolate

A few days later, while picking up some yarn from Michael’s, I found candy cane flavored melting chocolates.

Score.

I warmed the chocolate. I dipped the pretzels in dark chocolate. Allowed them to dry.

Then I drizzled them with the candy cane chocolate. And then a few of them, I just dipped into the candy cane chocolate.

Odds and Ends

Today’s post is an odds and ends sort of post. I’m making peppermint vodka. It’s still “cooking”. 6 ounces of vodka, 4 peppermint candies=a little bit of peppermint flavor. I’m adding more peppermints (5 more) and we’ll see if I get a more powerful peppermint kick.

Crazy sale, crazy lady, brand new cake pop maker.

Heh. I need another kitchen gadget like I need hole in the head.

This adorably named cake pop maker was on sale at Kohl’s, Thanks to Rose for the heads up on the online deal!
plus it had a $10 rebate….making it less than $10. Unfortunately it’s a sale that has already ended.

I’ll let you know how the adorable gadget works!

Cake in a Jar

The idea & post for cake in a jar is courtesy of a question on my Facebook page.

Making teacher or co-worker gifts that will impress (not to mention survive the trip to school/work) isn’t always easy.

Cake~ baked in a canning jar fits the bill perfectly.

Here’s what to do…..

  • Cake mix…make your own or use a boxed mix.
  • canning jars, half-pint or pint-sized
  • Set your oven to the correct temp for your recipe.
  • grease the canning jars

This is very important…..

  • fill the jars ONLY half way full *if you fill them past the half way point, you’ll have a cake-eruption.*
  • place the jars on a cookie sheet
  • bake for about 20-25 minutes or until a cake tester comes out clean
  • remove the jars from the oven.

I recommend that you….

  • Ice the top of the cakes

  • place the lids on.
  • allow the cakes to cool.
  • Store them in the fridge until you are ready to send them off to school or take them to work
  • re-ice the cakes before you send them off, the first icing will melt into the cake a bit.
  • The jars should be stored in the refrigerator and eaten within 2 weeks.

The recipe I adapted and use came from By Stephanie Lynn.com
  • 2 1/2 cups of sugar
  • 1 cup of Extra Virgin Olive Oil
  • 4 TBSP of Lemon Juice (fresh or from concentrate)
  • 2 TBSP of Lemon Peel (fresh grated or granulated)

It's edible, but it's for your hands.

  • Mix it together until smooth
  • Jar it up in lovely canning jars
  • Gift it to the people you love

I read a great post on Things I Can’t Say yesterday. I love reading what Shell writes, I like to think that we’d be coffee or wine friends if we lived in the same state. I think that about more than a few people, but I’m way friendly and super social in my imagination. Anyhooo…. I loved the concept.

It’s okay.

I want to say something similar, but holiday related.

It’s okay……

If more than half of my Christmas gifts are homemade this year.

I am going to spend the next few weeks posting about homemade or handmade things you can gift to friends, teachers, neighbors, and of course family.

I’d like to hear from you…..

What sort of homemade goodies should we explore? I’ve had a request for jarred cake, I’m working on that.

Any other requests?
