A Waffle recipe, a Swanson Health Products review and a giveaway!

Yesterday I told you a bit about  Swanson Health Products.  I also shared my sweet and nutty fruit bar recipe.
As I told you yesterday, Swanson Health Products sent me a few items free of charge so I could review them.  Three of the 4 items I picked were “new to me” items.   Ben from Swanson, who is one of the contributors on the Swanson Health Blog,  was so helpful and friendly.  He gave me some great advice on choosing my items.  Thanks to savvy shopping and Ben’s helpful hints I was able to buy 2 of each item.  Which means…1 for me to try and 1 for you to win.  Below is a picture of the items I received for review.  One lucky reader will win a prize pack identical to the one I am reviewing.

I also told you yesterday that I’m a big fan of online shopping, slightly in love with coconut water and that I prefer my pajamas.  :D   Just in case you missed the post.  :D

Here is a little more information about the 4 items I got from Swanson Health Products.

  • Rooibos Tea ~ This tea is caffeine free, which is great for evening drinks, I love coffee…LOVE coffee.  Drinking coffee in the evening is never a good idea for me though, I end up feeling like a nervous, twitchy Chihuahua.  The tea is very flavorful and satisfies my evening warm beverage desire without making me more spastic than usual.   I really like that each of the tea bags are sealed in a non-paper wrapper.  I could pack these into my purse or a camping bag (oh yes, I camp) and know that they would not be damaged as easily as the paper wrapped tea bags.

     

  •  Organic Buckwheat Flour  ~ I was a little worried about this flour, I’ve never used buckwheat flour before. I really like that it is gluten-free. I have some extended family members that are gluten intolerant, so having a gluten-free option in the house (just in case they visit) is nice.    The buckwheat flour worked great!  I made waffles with it.  My kids loved them!  In fact, my daughter preferred the 1/2 buckwheat~1/2 all-purpose flour waffles to our normal waffles.  The addition of the buckwheat gave the waffles added depth of flavor and the waffles soaked up the maple syrup without becoming soggy.

My waffle recipe: adapted

Should serve 2 people. Unless they’re really hungry or teenagers. If you’ve got teenagers go ahead and triple the recipe.

  1. 1/2 cup all-purpose flour
  2. 1/2 cup Organic Buckwheat Flour
  3. 1 & 1/2 teaspoons of baking powder
  4. 1/2 teaspoon of baking soda
  5. 3 teaspoons of sugar
  6. 1 egg
  7. 1 cup of buttermilk
  8. 1/4 cup of water
  9. 2 Tablespoons of melted butter or olive oil
  10. 2 teaspoons of vanilla

Mix the dry ingredients together.  Mix the wet ingredients together.  Mix the wet ingredients to the dry ingredients.

Cook using your preferred waffle maker.

Hello tasty goodness...

  • No Stir Creamy Almond Butter ~ I was so excited to try a non-peanut butter, nut butter.  :(   I did not love it.  It has a very strong flavor.  Unexpectedly strong.  I picked it because I really like almonds.  On a cracker, it was thick and had an unpleasant texture.  I could not imagine eating an almond butter and jelly sandwich.   Not. At. All.    I did find a way to use the almond butter.  I made peanut-almond butter cookies.  They are flavorful and although the taste is different than a peanut butter cookie, they are totally yummy.  I will use the rest of the almond butter making cookies.  I’ll post the cookie recipe soon.
  • I wish I had picked the sunflower butter. :(   Next time I order from Swanson I will order sunflower butter.

I really like that Swanson Health Products has a return policy that is good for 1 year.  How awesome is that? A year!

The items I received from Swanson Health Products were shipped quickly, packed very well and all in gift-able shape when they arrived at my home.

Fruity Nutty Bars

On Friday (tomorrow) I have a product review and giveaway to tell you about from an excellent company.

Swanson Health Products sells a wonderful range of high-quality, competitively priced & mostly organic products.

From vitamins to shampoo to organic flour to oils and nut butters. They have it.

Caroline of Sweet Caroline introduced me to Swanson Health Products through her bell pepper & onion crostini with pesto post.

Linda of Spice Girl Fla posted a wonderful recipe for date-walnut bread using Swanson Health Products.

I really, really like this company! Many organic products are hard to find in my area. Sure, I could drive to Whole Foods or Sprouts (both of which are in another city) and probably find these items, but something about shopping in my pajamas really appeals to me. It might be the sloth (not the animal)

This is a cute sloth, not to be confused with me being lazy in my pajamas.

but it’s most likely that I just really hate wasting gas driving all over town. Maybe it’s a little of both.

I received 4 items to try and review. These 4 items were sent to me free of charge.

The first item I am going to tell you about is Organic Unsulphured Coconut Shreds. I use a lot of coconut. Since I make granola (cereal), coconut macaroons and fruity nut bars, just to name a few things, I’ve had the chance to try many brands and types of coconut.

I’m a little bit in love with coconut water, but that’s for another post. ;)

This coconut product is wonderful. I really like that it is organic, the price was very reasonable. It is flavorful and easy to work with.

I made fruity nutty granola-ey bars with it.

Hello tasty goodness...

Here is what you need to make these tasty goodies.

Using a food processor, chop up the chocolate chips and almonds. Chop them into a fine mixture.

Place them into a mixing bowl and add the coconut and wheat germ to the mixture.

Use the food processor to chop up the apricots and dates, then add them to the mixture.

Mix really well.

Add the marmalade. Mix well.

Line a baking dish with wax paper, add the mixture to the baking dish and press the mixture down as flat as you can get it.

Allow to chill overnight, or for at least 2 hours.

Cut into bars, store in the fridge for up to 2 weeks. These bars are sweet, like candy, and very tasty.

I also used a muffin pan with wax paper to make the cute little disk sized bars.

G is for Gray or is it Grey?

I don’t mean to go all Sesame Street on you fine folks…seriously…but

These cake pops are too cute! No, I did not make these...

The whole gray ~vs~ grey thing has always confused me.

Two words, one meaning…which you say depends on where you live.

In the United States…we use the word gray, in the United Kingdom it’s grey.

Same meaning, different spelling.

I prefer grey. Okay, wait, wait, wait…

I like the word grey…. the word. I like the color grey, as in a color to wear.

I don’t like grey in my hair.

Maybe I should call it gray when it’s in my hair. Heh!

But, it is...it really is a big deal!

I am not a fan of gray hairs. I honestly hate them, I curse them,

I curse AT them.

I have been fighting gray (or white) hairs on my reddish-blonde head since I was about 24.

How totally unfair is that?! 24, twenty-four, 2. 4.

Not cool.

I’m not sure why I have been going gray since my mid-20′s, it’s probably genetics. My grandmother says it’s because I was a wild teenager. Which I was. Hush. I still think it is genetics.

The big issue is, my gray hairs make me feel old.

There, I said it.

I don’t mean to be vain, really I don’t. I’m sure it’s something I’ve been conditioned into by the media.

Women with gray hair are told (by the media) that we need to color that gray. Get rid of the gray. Heck, they have hair colors that work in 10 minutes so we can cover that gray easily while getting ready in the morning.

Men? Well, they’re told gray hair is distinguished. In fact,  they have products to remove just “some” of the gray for men. Keep just the right amount of gray, they say.

Keep some gray, because it's sexy...if you're a man.

Why?

I found this picture on a Google search. This woman looks amazing (even with her gray hair). Granted this picture is from a Plastic Surgery brochure, but still she is lovely. Why can’t we see gray hair like this?

Meanwhile, I’m off to color my hair…because I can see the gray and I don’t like it.

Totally Tardy 7 Links….

Caramelized Onion Relish

This week is the 4th week in the canning link-up Allie and I are hosting.

I almost made brandied cherries…next time….maybe.

I had a busy cooking weekend.  I bought a small army of onions and jalapenos on Saturday.   I made more Jalapeno Relish and Candied Jalapenos.  I also made Slow-Cooker Caramelized Onions via Andrea- From the Bookshelf-’s recipe.

Busy, busy and boy did my eyes water a lot over the weekend with all the onion and jalapeno slicing.

Since I had more onions than I needed to make the Slow Cooker Caramelized Onions (which I separated into 4 meal sized serving portions and froze).

I decided to look for an onion canning recipe.  Easier said than done.    Onions and canning can be tricky business.  Without something acidic in the recipe (like vinegar) you need to pressure can the onions.  Pressure canning is not something I have ventured into yet.  The pressure canning cook times are LONG, and I am concerned about the issue of Botulism.

I wanted to do something a little different this week.  Something with wine, something with onions.

I decided on a sweet, savory onion relish.

Since this relish has balsamic vinegar in it, it is water bath can-able.

I’ve had Onion relish as an appetizer.  It’s great on burgers or with steaks.  According to My Pantry Shelf  (where the recipe I used came from) it is great on pizza too.

Caramelized Onion Relish

adapted from My Pantry Shelf and The Complete Book of Small-Batch Preserving

My adaptions are in purple

Here is what you will need to make Caramelized Onion Relish:

4 large red (I used yellow) onions, peeled and thinly sliced

1/2 cup packed brown sugar

1/2 teaspoon of celery seed

1/2 teaspoon of turmeric

1/2 teaspoon of pumpkin pie spice

2 cups dry red wine

6 tablespoons balsamic vinegar

1/2 teaspoon each salt and pepper (or to taste)

Place the onions in a pot, over a medium heat.  Add the sugar, celery seed, turmeric and pumpkin pie spice.  Stir the sugar and spices into the onions.

         

Cook the onions for 30 minutes or until onions are soft, browning and caramelized. Mine took 45 min to cook down.  My onions were very moist.

Once the onions are cooked down until most of the liquid has evaporated, add the wine, vinegar, salt and pepper.

  

Bring the mixture to a boil, then reduce the heat and simmer the mixture for 15-20 minutes until the liquid has reduced and it begins to thicken. Mine took about 40 minutes to reduce and thicken, but I made a double batch, so that might be why it took longer.

Prep your canning jars: sterilize the jars and warm the lids. 

Ladle the relish into the hot jars, making sure to leave 1/2 inch of head-space.

   

Wipe the jar rims and place the lids onto the jars.

Process the jars in a hot water bath for 10 minutes (for half-pint jars) or 15 minutes (for pint jars).

Allow jars to cool for 5-10 minutes before removing the them from the water bath.  Place the jars on the counter top to rest overnight.

Check the seals on the jars and store them in a cool, dry place for up to 1 year.

Anyhoo……Happy Friday my friends. It has been a few weeks since I have updated you on my garden.

I’m afraid my gardening is winding down. My raised garden box is sinking-sideways into the earth. The super hot, relentlessly dry summer, combined with water restrictions created large cracks in my backyard. Don’t worry, my house foundation is perfectly fine thanks to soaker hoses.

I tried to show the crazy lean in a picture. I’m not sure I did it justice.

Pardon my grass, it needs to be mowed. So, hopefully you can see…my raised garden bed is sinking. My husband is working on my expanded garden space, but it won’t be ready for Fall planting so, I’m probably done gardening until the Spring.

I cut the okra down. Since my garden is sinking I have been removing the plants. The only plants left in the raised garden? The (unexpectedly) hot peppers. The royal purple bean plants. The purple hull peas. And, of course, Strawberrytopia.

The royal purple bean plants are very small still, they flower but have not produced any beans.

The mint plant is still doing well. It has not taken over the side garden. I believe the heat probably stunted its growth.

The carrots are still small-ish, I think maybe I planted them too close together?

Now for the really exciting part. The purple hull peas? Growing lovely little peas. The pea pods start out looking like strange monster claws.

The monster claws grow longer and wider, the peas within grow and swell the pods. Then they look like this…

There are not enough peas for a meal yet, but I’m very excited about the purple hull peas! They are the only reason that I have not completely gutted the garden box yet.

it’s not junk…

Okay…on to my Thursday post. I tried to adapt a recipe for a spicy cornbread. I did something wrong….it did not turn out right. It was really gross. Gross and thick and just plain yucky.
So,
I’m post recycling. It’s good for the interwebs, and really good for days when your recipe falls flat and you have nothing to post! :D
Our local news has reported a lot of car break-ins in my city over the past few weeks. Seeing the news stories reminds me of when my car was broken into.
Car break-ins are not really investigated. It’s a frustrating crime. It is low priority for the authorities. Low priority or not, it is a horrible violation. I have had my car broken into twice since we moved here 8 years ago. Once the window was broken and I had non-perishable items such as soda, water and paper towels stolen.
This post is about second time my car was broken into……….I wrote this a year, maybe a year and a half ago.

It’s funny, the things that really matter to one person are just trash to another.

Let me explain.

My car was broken into last night.

I believe I failed to lock it last night so, I guess it really was “opened” by persons unknown and rummaged through, but it felt like a break in. No windows were broken, nothing taken from the dashboard. All my car’s nooks and crannies were opened, searched and items were left scattered about the car.
I have learned not to leave things of value in the car. A lesson you learn when your window gets smashed in so that unknown people can steal the coke and paper towels out of your trunk area.
All that is to say, that I rarely leave anything important to me in the car, and I usually lock it.
Last evening I must have been in rare form, because I left my coupon carrier in the car and the car remained unlocked. My coupon carrier looks a little like a wallet, it usually stays in my purse, but it must have fallen out and landed on the seat.
When my daughter and I got into my SUV this morning everything was askew. Things were open, not where they should have been and there were little white pieces of paper all over the drive way.
I made a mental check: nothing seemed missing, then I realized I had left my coupon carrier in the car. The loss of my saving tool, my way to get things at half price or better was awful. My “Mommy’s little helper” to stay on budget is very important to me. Taking care of my family, helping save money for our families future…these are my JOBS.

My job tool was taken, think of it like a carpenter without his hammer.

Blah.

I’m happy to say that I found it.
2 houses down, dumped out, coupons wet from dew and all left vulnerable on the grass and driveway of an unknown neighbor’s house.
My daughter and I collected the coupon carrier and all the poor, wet coupons and I took her to school.
My coupons are all soaked, but most of them are still there. I guess the thieves decided they were junk, not worth their time.

I’m glad that since I accidentally left the coupons in the car I also accidentally left the car unlocked. I would have hated to get my window broken out for my coupons.
I’m also glad that the thieves could not see the value in my tiny scraps of paper, my junk.
I do wish they had not thrown them all over the ground though, but I guess polite thieves is a little much to hope for.
My poor wet coupons are all laid out on the dining room table drying on paper towels I got (with coupons) for .30 each. It might have seemed like a waste of time to the thieves, but I would have been lost without my coupons. I’m glad they left them behind.
As I write this I am realizing that my CD’s are missing. Oh well, most of what I listen to is on my iPhone anyway. It’s a frustrating loss, but it could have been worse.

It’s sort of funny. My car was violated, but I’m thankful. It could have been WAY worse.

Things I shouldn’t say, according to my teen…

It’s rough being the parent of a teen.  The emotional ups and downs. The judgement.  The sighs.

Teenagers are strange creatures.  They grumble and grump about.  They are an interesting mixture of child and adult-ish person.

Parenting a teen is hard Yo. For Reals.

I’m weird, according to my teen.  Yep, it’s true.  My 13 year old son thinks I’m weird, strange, sometimes juvenile.

So here is a list of things my teen thinks I should not say.

Ready?

  • Dude… apparently I am not allowed to say dude.  It’s weird.  I should not say it.
  • Boobs…Moms are not supposed to say boobs.  Moms are supposed to say breasts, or never speak of female body parts at all.
  • For Reals and True Dat… I’m not a gangsta…I should refrain from saying these words.  Apparently.
  • Chicken-butt…It’s silly, ridiculous and moms should not say it.
  • Awesomesauce…Now this is a big one.  This one really riled him up.  His friends say awesomesauce.  His mom is not supposed to say the same silly phrases his friends say.

It’s an ever evolving list.  My son keeps adding new words to the list.

Here is a list of things I do that are weird.

~~I dance, to all sorts of song.  I car dance, I dance around the house. I try to make him dance….shocking and horrible.

 Hor. ri. ble.

~~I sing.  I change the words to songs, I’m silly.
~~I make up words.  Like turgers (turkey burgers) and merdle (man girdle)and slink (slushy drink).

Anyhoo…

Personally, I think it’s awesomesauce that he has his own opinions.  But, dude…it’s a free country and anytime someone says “What’s up?” I am always going to say chicken-butt.

Whole Wheat Apple Crisp

I had planned to try making the Cheddar and Chilies Cornbread Scones, but I’ve got a sick little girl (okay….she’s 12, but she’s still my little girl!) I took her to the doctor today, yucky sinus infection. Poor baby. It is so awful to have a sick child. As a parent, I want to protect my children, as a mom…I’m the fixer. I can not fix an infection, I can not fix the headache that has been tormenting her. I can only keep her as comfortable and hydrated as possible, give her the medication the doctor prescribed and make her apple crisp. :D

My daughter loves apples, especially the Apple Pie Filling I canned about a week ago. I adapted the Betty Crocker Caramel-Butterscotch Apple Crisp .

Here is my ingredient list.

  • 2 pint jars of Apple Pie Filling
  • 2/3 cup packed brown sugar
  • 1/2 cup Gold Medal® white whole wheat flour
  • 1/2 cup quick-cooking or old-fashioned oats
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/3 cup cold butter or margarine, cut into 6 pieces

White Wheat Oat Quick Bread

How was your weekend?  Mine was very nice!  We went to a house blessing and saw some lovely friends and……We had rain!  Can I get a WOOT?!  It was lovely to hear the rain beating down upon the roof.  We’ve been rain free for so long.

Rain makes me want to bake.  Heh! Who am I kidding, any weather makes me want to bake.  I’m just using the rain as a convenient excuse.  :D

One of the Gold Medal recipe cards that I received with the myblogspark package, was for a quick bread.

Fruit and Oats, lovely!

Here is the ingredient list.

  • 1 cup 5-grain rolled whole-grain cereal or old-fashioned oats  *I used old-fashioned oats
  • 3 cups Gold Medal® white whole wheat flour
  • 1/3 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 3/4 teaspoon salt
  • 1/4 cup cold butter or margarine, cut into small pieces *I used butter
  • 1/2 cup dried cranberries, cherries or raisins  *I used 1 cup of dried fruit, half cranberries and half raisins.
  • 1 egg
  • 1 1/2 cups buttermilk

This bread is wonderful.  Not too sweet.  It is moist and lovely.

**And now for a neat surprise.  Go to the Betty Crocker website.  Look through the recipes listed here.  These recipes all use White whole wheat flour.  Pick one recipe from this website that you would like to try using the white whole wheat flour.
